Creamy Smoked Salmon and Caper Fettucine

One of my all-time favourite meals, enjoyed with a glass of white wine. Rich and satisfying.


Serves 4 - 6

Ingredients
500g fettucine (or any pasta you prefer)
1 Tbs olive oil
3 cloves garlic, crushed
1 red onion, halved and sliced finely
1 cup white wine
300g Tasmanian smoked salmon
300mL light cream
150g capers
1 Tbs sugar
salt and pepper, to season

In a large pot, boil the fettucine per packet instructions. Meanwhile, in a separate pot, heat oil. Add garlic and fry for 1 minute. Add the onion and saute until just soft and transparent. Add wine and boil down for 4 - 5 minutes.

Add cream and bring to boil, stirring regularly. When sauce has thickened, add the ssugar and capers. Drain the pasta well, add to the sauce mixture and stir to combine. When heated through, add salmon and stir through. Season and serve.

Mini Berry Pavlovas

This extremely quick and easy dessert will impress!


Serves 2

Ingredients
1/2 punnet strawberries, top trimmed, cut down middle into quarters (depending on size)
1/2 packet fresh blueberries, washed
1/2 Tbs sugar
1 Tbs white wine vinegar (balsamic vinegar could also be used)
2 - 4 Coles Petite Meringue Nests (depending on single or double serving)
whipped cream (I used 'Ready Whipped Cream' in a can)

Combine strawberries, sugar and vinegar in a small bowl. Stir, cover and refridgerate overnight.
To assemble: Place meringue nest/s in centre of serving bowl. Place a dollop of cream beside nest/s, spoon over strawberries and blueberries and drizzle with strawberry syrup. Voila!!

Oh, did I mention that whilst preparing this dish, it's imperative that you enjoy a 'Blueberry Float' sparkling wine??

Thai Chicken Fried Rice

With me, there's no one, single recipe for this dish. I've made it so many times now, that I'm pretty much happy with it when it incudes the essential Thai ingredients....

...fish sauce, soy sauce, fresh red chillis, lime and coriander.

For this rendition, I didn't have any fresh red chillis, limes or fresh coriander. Read on to see my substitute ingredients.


Serves 4 - 6

Ingredients
2 Tbs oil
2 tsp garlic, crushed
2 tsp ginger, crushed
2 tsp dried chilli flakes
5 spring onions, chopped into 3cm lengths (Again, you could use less)
2 cups BBQ chicken, skin removed, chopped roughly
6 eggs, lightly beaten (You could use less if you preferred, but I love my eggs)
6 cups cooked basmati rice, cooled to room temperature
1/4 cup fish sauce
3 Tbs soy sauce
2 Tbs coriander paste (from a tube - I used Gourmet Garden brand)
pepper, to season
kecap manis and lemon wedges, to serve

Heat oil in wok or large frypan. Add garlic, ginger and chilli flakes. Stirfry for 1 minute.
Add spring onions and chicken and stirfry for 1 - 2 minutes. Push contents of wok to the side. Pour in beaten eggs and allow to form a loose omelette by pushing your spoon/spatula through the egg while it cooks.

Once the egg mixture is semi set, stir the contents of the wok together. Add rice and stir to combine. Next add the fish sauce, soy sauce, coriander paste and pepper and stirfry until combined and heated through. Ensure that sauces are distributed evenly throughout rice.

Serve with a drizzle of kecap manis and a lemon wedge.

Sundried Tomato and Chargrilled Capsicum Fritomelette

With yet another fridge of leftovers and a few eggs, I managed to scrape together this thin frittata / thick omelette. This dish would be great as a light dinner or a tasty brunch.


Ingredients
6 eggs, slightly beaten
1/2 cup milk
1/2 small jar sundried tomatoes in oil, drained and roughly chopped
Whole small jar chargrilled capsicum, drained and roughly chopped
1 handful spinach and rocket mix
spray oil

Combine eggs and milk in a pouring jug. Heat large frypan over medium-high heat, generously spray with oil. Add sundried tomatoes and capsicum to fypan and stir for 1 minute. Meanwhile, heat the oven grill to a medium heat.

Pour egg and milk mixture over the tomatoes and capsicum. Add greens and stir gently so egg mixture covers the greens. Let this set slightly. When edges of 'fritomelette' have formed and the middle is bubbling, transfer the frypan under the grill and 'bake' until set to your liking. Ensure to keep a watchful eye over the dish at this stage to avoid burning.

Serve with a mixed salad, rice or steamed greens. Enjoy!
